Well since Sonic Colors is getting updated with new content and all for PS4, Switch & Xbox One, I feel that for another Sonic game (and it is unlikely) is that Sonic 2006 would be the treatment? As it is being reworked by fans (due to P-06) and it is the closest for a Sonic Adventure 3. I did played Sonic 06 before when I had a Xbox 360 but drop out when I got a PS3. So it's just an idea and maybe rework the story like how Garrulous64 did for his version and like how JorDanGo did for his idea.

Besides if Crash Twinsanity & Spyro: Enter the Dragonfly gets some demand for a remake (and being fixed but not rushed), don't see why not for Sonic 06.
