What is poutine? It's a French Canadian delicacy that will effectively cut years off your life... totally worth it.

A delectable combination of french fries smothered in gravy and cheese curds. Not just cheese, but CURDS. A true poutine has squeaky cheese! The cheese must be firm even when doused in molten hot gravy and stay firm until the end of the meal. West Coast poutines typically use mozzarella which melts and eventually disappears. Some people like this... but they don't know better. Gravy must also not completely drown the fries and curds, but balance everything out.

Advanced poutine orders can include Montreal Smoked Meat, ground beef, chili, pepperoni or any number of well assorted extras. A lot of french fry places try too hard with the extras and put too much. A real poutine puts the extras as just that, extras; with the fries, gravy and cheese curds in the forefront.

These two poutines (hamburger on the left and traditional on the right) were devoured at La Belle Patate in Downtown Vancouver, on Davie and Bute. Must go for true Montreal Poutine.
