do you use pencils or straight up water color?

I use pencils(correctly, sharp-pencils) for the sketch.
Then I colored it with water color

yeah b/c the only way i could even get close to that great of detail is if i used water color pencils. yep.

how do you make the white marks to show the creases?

It is very simple.
I make them with a small brush and white water color
(with few water)
