it's actually been stated both in canon and by Rebecca Sugar that gems are literally rocks with holographic projections as their bodies and so are genderless, but that every single one of them identifies as female/uses female pronouns. so they are a gay couple, because since they have no gender, they are all technically the same gender, therefore gay. Both Ruby and Jasper do have a more masculine appearance, yes, but they identify as female.

i can understand if you wanna headcanon an AU where they're not gay but it's not always the best idea to just declare something to other fans that has been proven false in canon. Some people can get kinda defensive about that sort of thing

Actually, Rubys are a kind of sapphire, but, red. (There are many colours of sapphire, except red, because red is a variation of sapphire, the ruby)
And I (in my opinion) don't think that Ruby is gay.
