Well, let me tell you.
He doesn't capture them all like the theme song because HIS main goal is to be the world's best Pokemon Master. A Pokemon Master doesn't necessarily capture all the Pokemon. What it mainly means is to train hard and create a strong bond with your Pokemon. Pikachu and Ash show a strong bond because, if you don't remember in the first gen, Pikachu first attacks Ash.
Also, the song is actually what ENCOURAGES the people to play the game and try to catch them all because the difference of being a Pokemon Master in the game and the show is that the show wants you to create a strong bond with your Pokemon while also making them strong. The game is just training all your Pokemon to be the highest level (Lv. 100) and capturing all the Pokemon.

So, maybe Ash first thought that being the best pokemon master meant catching them all, but then he learnt that a pokemon master actually means creating a bond with his pokemon.

Yep, he only catches like about 5-8 PokΓ©mon each region. And many of them don't evolve!

Yea. And never uses them again, besides Charizard. If their doing Omega Ruby and Alpha Sapphire in the anime he'll actually use something again and hopefully catches more -_-
