I think Leafeon would represent a color variantion of a plant species (In my town i have seen some garden with plants that instead of green leafs, they are violet or pink). Glaceon reminds me of those souvenirs that changes the color depending the weather. And Espeon can represent a japanese mith about the gold (mineral and color) being related to psychic powers and lucky
