It's because they didn't actually get to do anything onscreen until Rebels and Rise of Skywalker.
They were intended to so something (Going by unused cockpit dialogue footage I think they were supposed to wreck some Star Destroyers) back during RotJ where they debuted... but the sequences were scrapped thanks to the B-Wing models having a tendency to outright disappear from certain angles.
