the three desserts I was in charge of at the last "kitchen" class at school. The 4 star restuarant on campus: L'Ecole. Our seasonal torte (almond jaconde, citrus mousse, and apricot glaze, a creme brulle with a side panna cotta tart, and lastly our chocolate trio. A ganache tower, a bavarian, and my fav, the marquis.
