There are plenty of tutorials in FortheGmodders. They cover nearly everything, from basic graphics to posing. I'm sure if you take your time to view them and keep trying, you'll end up being a fantastic Garry's Mod artist.
Hell, this isn't even the best out there, there are people more skilled in this than I am. Stop by FortheGmodders and I'm sure you won't regret it.
'Sides, I, erm, don't know how to record in game, so a Youtube tutorial wouldn't be possible.
