we used isomalt, a sugar substitute. its 10 parts isomalt to 1 part water, boil to 330-340F then aerate as you would regular sugar

and i didnt answer the other question so... to blow the sugar we use a one way air pump and put the sugar on the end of the pump's wooden end and fasten it there, then pump air into it slowly and just form w/e shape you want....
