she's an independent demon hunter, not actually part of any military. But I guess her work would yield enough money for her to afford bits of plate armour

I mean a single person absolutely could become competent at demon hunting. It depends what the demons are like. She does have a few magical abilities to aid her, but yes she also has 3 other friends who together mainly work as monster hunters.
Also this is fantasy so not everything is always going to make 100% sense, even if I do generally like to think about and apply believability and logic to my lore
