In a breeding I would most likely look for either new pokemon that I don't have or just some neat combinations that I think could end up pretty great

Not too long...? That's already a pretty long list... XD
Half of which, at least, are not available because they are either mated or because of story

Garnet, Shade, Specter, Cuddles, Ivy, Mavis, and Pippin would be open to pick from in my eyes

Beta is a great choise really ^^
Beta  x Specter  and Beta  x Pippin  could work well don't you think?
I'm thinking either of those could work personly since It's fun doing breedings with Beta ^^

That's true and what would be cool is if we could try to do a breeding with Pippin  sometimes in the future, but then I would have to use a legendary slot of mine xD
