Feel you with the water thing...I have that 'wavy' look the paper gets...(sometimes I iron my works to make them smooth again xDDD) Of course, the more thicker the paper, the more water it takes the paper to suck up and do that uggly effect...
When I'm buying the paper I usually go by the thickness, not the brand
Maybe I know now why the salt isn't working for you. It needs a surface fairly watery for it to work, and you don't seem to use water much, maybe that's why? Well, I use thin salt, it absorbs the water more quickly, but it also works with bigger salt crystals, it just takes a lot of more time!

Just don't forget to put a piece of cloth between the iron and the drawing, you could burn it up accidentaly ^^'
