The rising pillars have been done to death, and turning them from ice to honey doesn't make it more thrilling. People will find that boss concept fun when pigs fly. Oh wait...

Alpine Swine is a flying pig with a tuba like alphorn. When he blows, either snow boulders will fire out, or the sound will knock stalagmites from the ceiling. Pillars around the room will act more dynamically based on how the Swine throws his weight around. the pillars might actually throw you into a hazard or crush you if you're not careful. His wonder changes to where you're walking on the back wall dodging hazards and with him breaking parts of the wall to limit how you move. the arena is more of a circular hall than a room to give the fight a larger scope.
Bonk him on the head 6 or so times and he's bacon.
