We saw her break down in tears but I wonder what Ruby's next reaction will be, something like this and have to be pried away from Penny or explode in anger at Pyrrha's "betrayal".

Look, not to disrespect you or anything (believe me, that is NOT my intention. Far from it, actually) but, I don't get why people keep theorizing that she'll explode in anger at Pyrrha for "murdering" Penny.
Now don't get me wrong, I do NOT see it as a completely unlikely scenario (and I'll tell you exactly why I don't later on) but, it seems that; at least from the events of episode 8 (the aftermath of Yang's fight with Mercury), that she may have connected the dots after she:
A) Found out from Velvet that Coco may have experienced a similar thing during her and Yatsuhashi's fight with Mercury and Emerald.
and...
B) Found Emerald amongst the audience after Velvet mentioned that to her during what would eventually become Penny and Pyrrha's fight.
Also, to add to that, this was also right after the news of them returning back to Mistral after the events of his fight with Yang, which, I don't care how old or how mature you are, if that shit happens then, I'd assure you, you'd probably be suspicious to.
Of course, to add to this again, this also lead to her finding Mercury walking again in that... stock room or whatever that was inside the stadium, where she also learns that, not only did Mercury and Emerald frame her sister (as implied to her reactions in episode 9 right BEFORE she sees the aftermath of Pyrrha's fight), but they maybe doing something similar to Pyrrha and Penny's as well. Not to mention, what Mercury told her at the end of episode 8:
"Ooh, polarity versus metal. That could be bad..."
That would not only confirm that they indeed sabotaged his fight with Yang (causing her to be framed in the process), but that they also might be planning to do something similar to Pyrrha and Penny's fight, hence her trying to call someone on her scroll (before it was shot at by that asshole), then running away (again,) from that asshole, presumably to try and stop the fight on her own, only for her to make it back outside into the stadium too little, too late, possibly witnessing the aftermath of Pyrrha's fight.
Now, the way I see it, there might actually be 2 outcomes for this:
1. Going back to how I do not see what you've stated as an unlikely scenario, she might be overwhelmed by everything that's currently happening right in front of her that, she may indeed lash out on Pyrrha or some shit (mainly due to her being so messed up by everything that just happened), only for her to stop and think about what's really going on.
Or alternatively...
2. She may be messed up due to everything that just happened but, she's somehow managed to nearly connect all of the dots into what really happened not only to her sister's fight, but to Pyrrha and Penny's fight as well. That it was, indeed, sabotaged by both Emerald and Mercury. And if that's not enough, she may even remember Cinder's voice as she transmits her message after meeting her in "Welcome to Beacon", and maybe even recognize that queen chess piece symbol from "Dance Dance Infiltration".
Now, mind you, I know that Ruby's... not exactly the smartest person in her team (what with her seemingly having a hard time understanding sarcasm, among other things...) but, she's not a complete dumbass either (I mean, she did design AND built her own weapon, after all). I'd say this is one of those times where you don't just underestimate her like that (again, not saying you are, believe me. I'm just saying...)
Either way, we all know one thing: She's been broken by these recent events, possibly losing what's left of her innocence as well... and that she's definitely fucking pissed. And something tells me that, we ain't seen nothing yet. Especially from her.
Either way, I apologize for this long wall of text (and my possibly shitty grammar), but that's my 2 cents on this whole thing. Please do not take any of this the wrong way (believe me, that is NOT my intention), but again, those are my 2 cents.

People forget what happens when a story gets darker. And now the costs come, and it won't stop for a while.

I didn't want to presume to know your feelings beyond what was implied by your choice of picture to comment on.
Their deaths hurt me too. I won't claim to know or even believe too strongly that they might return, but I don't think they have disappeared entirely, from the fandom or the show. I think we'll at least get to feel their influence and learn from and about them.

Cinder. She fails as a villain for we do not know her backstory, or what her motives are.

Mysterious fear works when you know the villain's backstory and have an idea for what their motives are. We've had no setup for Cinder outside of Episode 7.
We don't know her origins or why she is doing what she's doing. What is her motives? Restart the Great War? Destroy Remnant? Chaos for the sake of chaos? If so, why is she doing all this.
Good villains are the ones where you understand why theycommit the acts they do. Since Cinder's motive hasn't been revealed, we can't really see her as a good antagonist. She's pretty much a walking antagonist trope, and a boring one at that.

Well it's more likely that side characters will be dropping like flies. Although i'd HATE it if the writers become overzealous in killing off characters like William Shakespeare or the Writers of the GOT tv series.
Since you brought up RvB I think it would've benefited greatly if death actually meant something. Like say if Griff's sister stayed dead and he took it much harder than in canon.
