Ikuji tends to be a bit of a loner though, so you'll rarely see her with others, if at all.

Canonically she has reached her height limit and thus only would get fatter by eating. But in other instances? Go wild, I guess.

So basically she can eat anything and everything even a nuclear power plant if she so wanted. Nothing effects her stomach. Also if she would get bigger would her stomach get thinner do to the things inside getting smaller or would she still be plump.

Mmhm! That's the ticket. Though I'd expect something like a nuclear power plant to make her feel warm and sick for a while, but she should be okay in the end.
I haven't accounted too much for upwards growth by eating though, but to keep things simple every part of her scales up, so the latter answer is more correct.
