I think it's around Chapter 4 when they reach the Ferox fortress. in a dialogue before Reimi appears, Lissa complains how cold it is and Frederick tells her to huddle close to his mount that she will keep her warm.

...Well damn.  My whole setup is ruined now.  I made the horse male so it could be named after Kieran, from FE: Path of Radiance and Radiant Dawn because I thought it made perfect sense for Frederick to admire a guy like him (I think they're fairly similar.  They're both obsessed with training and their duty and they're both very loyal and brave.  The only difference is that Frederick is more serious about it, doesn't hurt himself a lot, and doesn't have a rivalry with another knight).

Now what am I supposed to do?  I already wrote the horse being a stallion named Sir Kieran all over the place.  In fan conversations involving my OC, Antoinette (Frederick's daughter who inherited the horse), in my newest story...  This kills all of it and I have absolutely no idea what Frederick would name a mare and it would take forever to change everything.

I'm pissed now (not at you, it's not your fault)...  How did I miss such a thing?  And why isn't it mentioned in Frederick's FE wiki page that I've been looking at (in case I did miss something important)?  It qualifies as a bit of trivia, if you ask me.

But maybe it's a translation error...  Like how there was confusion about the gender of Florina's Pegasus in FE7 because of translation errors.  But I'll likely never know...  Sigh...

There could be a possibility to call it a translation error.  Like you said, it's been done before in many other situations. But I understand your frustrations, especially when all the other knights in-game actually have had more interactions with their mounts like Sully and her stallion, Cordelia and Sumia with their mares, Gerome and Chercher with Minerva. I too also wished for some sort of interaction between Frederick, Maribelle and their horses to get a better idea. And believe me I too also thought Frederick's horse was a male, but after playing 3 playthroughs at that chapter, my own perspective changed as well. Never expected that at all.

But again, texts between english and japanese tend to be confusing especially when they get translated, I think a fine example to help in your research is:

this person has done a marvelous job in translating certain dialogues and official back story scans that never appear in-game. Maybe it could help you out. c:

And I can tell you are trying to make the story as realistically canon as possible so I'm just putting my own two cents.

You know, you're right!  It would've been neat to see more interaction between knights and their mounts.  And we never hear a word at all about Stahl's, do we?

And I've seen that source before, someone had showed it to me awhile back to answer another question I had.  It is a good source!

And yes, yes I am trying not to contradict canon, because I want to build the relationship my Avatar has with Frederick even further.  I already wrote their wedding, and I've started their honeymoon story.  And I created Antoinette awhile back as well, to be a fan daughter of Frederick (and daughter of my Avatar as well since Kelli married Frederick).  I even mention the pendant Frederick gives his wife in one of those event tile conversations.
