Veal Stew

Ingredients

2 lbs veal

1 medium onion, in wedges

1 bell pepper, cubed

1 pkg mushrooms (1/2 lb), sliced

2 garlic cloves, finely chopped

2 large carrots, sliced

1 can (284ml/9.6fl oz) beef broth

1 cup water

2 bay leaves

1 tsp salt

Pepper to taste

2 tbsp vegetable oil

Cooking Instructions

1. Brown meat in 1 tablespoon oil; in two batches. Remove meat to bowl and set aside.

2. Add 1 tablespoon oil to Dutch oven, cook onions and mushrooms for 5 minutes. Add in garlic and fry briefly for about 15-20 seconds.

3. Add meat and juices from bowl into the Dutch oven; adding in the bay leaves, beef broth, and water. Afterwards, adding in 1 teaspoon salt and black pepper to taste.

4. Cover and simmer for 60 minutes. Correct seasoning as desired.

5. Add in carrots, cooking 15-20 minutes. Drop in bell peppers during the last 5 minutes of cooking.

* Makes about 5 servings.
