I hate to sound pedantic (Especially after Carrie's Death) - but shouldn't her last name be "Skywalker"?

She's a Skywalker by blood, an Organa by adoption but she's always referred to as "Leia Organa" in canon, which means she chose to keep her adoptive father's name even after learning her true parentage (and actually kept the latter as a secret).
I guess nurture > nature in Leia's mind.

I would say no because she goes by General Organa in the new movies

She was adopted by the Organa family, not the Skywalker family (like Luke was) and so she always kept that last name in the lore. Not sure why she didn't change it. Probably because she loved her adopted family.
