I finally felt motivation to remake my old D.Gray-Man models with D.Gray-Man Hallow right around the corner.I feel like these two are better than their old counter parts.

I'm not sure why they didn't. They do in the anime in episode 13, Lavi mentions about a friend of his turning akuma, and he's actually talking about the finder. The other two i'm not sure why its not mentioned.

They got it from the d.gray-man reverse series. It's a set of three small novels (or at least I think it is. That's all I've found of it) that gives more information and puts things into a better timeline of events
