Description
I finally got to drawing full body redesigns for the apple siblings.
I used to love their original designs, which is why they look pretty similar, but once their parents were introduced in the show, I was honestly offended that they didn't give the three hardly any of their mother's coloring except for her orange mane and tail.
So I tried my best to lightly incorporate both their parents design and coloring.

Applejack (AJ) & Big Mac (BM).
For these two, they resemble their dad and the apple family.
    freckle/spotting on their coat (the color for the freckles/spotting is a color that doesn't necessarily match their palette since their dad's freckles are this way)
    larger, thicker, taller build than average pony
    fluffy coats
    face shape
    straight mane and tail
    green eyes

Apple Bloom (AB)
For AB, she resembles their mom and the pear family the most, especially in comparison to her older siblings. In my head-canon, this is a big part of her character arc, she feels left out and like she doesn't fit in with the Apples but once she learns about her parents she finally realizes how much she resembles her mother. This also for me makes sense as to why she's one of the few Apples to not have a cutie mark that is apple related.

    single colored coat
    teal eyes (I never understood why none of the three had their mother's eye color, its super pretty and goes well with orange/red colors)

Some random traits/things I did:
    all three of them only have two hair colors and they are two shades of the same color
    BM and AB have their dad's eye shape, more rounded, while AJ has her mother's eye shape
    instead of AB having a hot pink bow, I gave her a teal one to match her mom's teal hair ties.
    I gave BM a beard because I feel like it fits him so much

Overall I tried to make their color palettes more saturation, since in comparison to their parents, they seem to be less saturated. I also changed Big Mac and Apple Bloom's red colors to lean more towards red/orange rather than red/pink like their og palettes.
