Short answer: because those in the Western Rites of Christianity (Catholicism, Lutheran, Calvinism, Anglicanism, etc.) didn't understand Greek, so when they saw "JHC" they mistakenly thought the H was a middle name of His.

Actual answer: It comes from an ancient Christogram- which is essentially just a symbol you get by overlaying different letters, such as the Chi-Rho (☧) which comes from the Greek letters "chi" (X) and "rho" (Ρ), the first two letters of "Christ" in Greek (χριστός if you were curious how it looked). Its the same general idea with "IHΣ" (which is Latinized as "JHC") which is made from the first two letters + the last letter of His name in Greek (ΙΗΣΟΥΣ, which is "Jesus" in capital Greek letters). The "J" is actually "iota", the "H" is actually "eta", and the "C" is actually "sigma" (the "sigma" is seen as "C" in Byzantine Greek, however other forms of Greek may represent it as "S").

Never thought learning Greek would be useful when looking up Earth-chan lewds, but the world is strange in that way I guess haha.
