But... what does the Mi-go do with the brains? Place them on the shelfs of their home and brags about how they got them to their friends? Like a hunter brags over his last morse head he got on the wall?

It depends on which stories you consider canon and whether you believe what the Mi-Go claim to use it for. Apparently it's a form of simplified space-travel, with just the brain being so much easier to move around than the whole body. The Mi-Go seem to be capable of keeping the body alive in a separate facility, if the brain's owner wishes to use the body again. It seems to be a reward for human agents of the Mi-Go (as well as other species they've dealt with), to allow them to travel the cosmos free from the burden of their clumsy body.

Well... that anser that Theory i had as small (7-8 yeats old); that the humans ’true’ apperents is a lump of fat... and out Bodies just work as an exoskeleton...

so the mi-go are like the Great Race of Yith? Bur they switch mind with other beings (and in this way, ruin their life with families and friends and get them away to the madhouse)

Kinda. There are many similarities, but the Yithians seem to be more benevolent, or at least not actively malicious. It's left more or less ambigious whether the Mi-Go have simply a very alien view on life and see it as a gift to scoop out brains for space-travel, but just as the Yithians not bothering with asking for permission or opinions. But they also do seem to revere or worship both Nyarlathotep and Shub-Niggurath, so they are often portrayed as knowingly harmful to humans.
