I find it quite interesting that people are so anal about skin not shining. The tutorial even points out the fact in the beginning.
So even if you disagree with the artistic liberty of making skin more shiny, it doesn't really matter because for what the tutorial is teaching, it actually makes sense. Both form and light is taken into account and it is correct. So even if you disagree with the idea, the knowledge behind it is still something to learn from.
