Hammerfell fucked up the Dominion pretty badly. Fought to a standstill and kicked them out of their province.
If only the Medes hadn't kicked the Redguards out of their province...

Mede could't know that the Redguards would win and he didn't wanted to jeopardize the Empire.Look at this from another side.

The Empire had three more races of men on their side. They could have just kept fighting like the Redguards.

Don't think of the Empire forces only as Cyrodill natives all the three races ARE part of the Legion and the Legion had lost over half it's forces, most of what remained being wounded and when Hammerfell was rejected even less soldiers were able to fight so the only way was to sign the treaty and reorganize for the next war to come.

As in, that's why I said the Empire had three more races on their side.
Hammerfell was kicked out after the treaty was signed because they refused to stop fighting.
The Dominion likely had quite a few losses as well. The Empire could have had a good shot at winning if they continued.

Hammerfell was kicked because they opposed of handing their lands to the Dominion after the treaty they started to defend themselves. The Empire had very big casualties (around half men were dead) and they did not know how many the elves had so it's not a good strategy to attack someone with half your army dead and your capital and country still in blazes and without the info about your enemie's casualties ,it would be a suicide.

Hammerfell succeeded in kicking them out, didn't they?
In the Battle of Stalingrad, the Red Army was outnumbered and at a disadvantage against the Axis Powers, but still pulled off a victory. Besides, if the Empire had lost half its men, I think it would be pretty reasonable to assume that the Dominion had suffered losses as well. If you look on TES wiki, the casualties for both sides are labelled "heavy".

Hammerfell succeeded because they were figting on their land and they are the best swordsmen in Tamriel and they won mainly because there were Clans who didn't fight in the Great War but started to cooperate with each other to fight the Dominion. And its not reasonable to assume how many losses suffered your enemy and just attack them with half an army. And we know about the casualites that they were heavy for both sides but the Empire didn't know about that ,again it's not good to attack someone without that information.

Apologies. Was on vacation and wasn't allowed to bring my computer.
Anywho, I took a look at the Great War page on TES wiki again. From what I saw, most of the battles were on the Empire's turf, so with that logic, they could have succeeded as well. Furthermore, if the Redguards are the best swordsmen in Tamriel, why would the Empire think it's a good idea to kick them out?
As for the clans, I'm pretty sure if the battle kept going on, they would have started fighting eventually, possibly due to a Pearl Harbor-like effect.
The TES page also said that the two were at a military stalemate, but the Empire was the one who submitted to the Thalmor. If the Empire didn't know about the forces of their armies, they could have considered the population of the provinces the Dominion occupied, and could have done casualty estimates of the enemy's army based on what they saw after each battle.

I actually created a Yellow Elf character at one point who mainly hunted the Thalmor as retribution for something they did to his family. I'm alright with High Elves. Just not the Dominion.

I chose Stormcloaks for my Redguard because Hammerfell prospered without Imperial interference so why can't Skyrim?
