I think it's that when he changes into the Hulk the first time in the movie, there are no enemies in sight. He need something he's allowed to kill or he loses it... at least, that's how I see it. In the battle scene, his rage is directed at something, while in the scene with Black Widow he doesn't have anywhere to direct it accept her.
