Rarity marries Applejack after Jackie goes through a rough break up with Rainbow.

When we firts meet her in season one she is very materialistic and shallow, but this becomes diluted over the years and she begins to appreciate the little and less expensive things more.

Rarity can come off pompous and bitchy on the outside but this is a bit of a defense mechanism that she has developed after living on her own and trying to get herself established in one of the most competative industries.

Rarity has struggled majorly with her sexuality for years. She never officially came out the closet until she became engaged to applejack. She dated numerous stallions over the years and while she did develop genuine feelings for oe or two, she couldnt shake her attraction to mares. After all a stereotypically atractive mare like herself shoudlnt and couldnt be attracted to girls right? She had to marry a rich upperclass stallion, right? wrong.

Rarity takes in Jackie and her kids as her own, before they eventually end up having their own. Relationships with Rainbwdash are rocky to say the least after she gets with Jackie. It does eventually become solved with everyone back on good terms but it took a lot of work to get their. Rainbow initially accused Jackie of cheating in the relationship with Rarity and then began saying that Rarity was blatently choosing sides.
