Its kind of a shame that Caren never has any encounters with her father in the Fate Series; it wouldn't surprise me if she doesn't know Kirei is her father.

She fell into some sort of infatuation with him somehow however so I think it was something more like dubious consent or she's a masochist. Eitherway, its a very strange relationship, that of a nun and the root of all evil. Plus Angra Mainyu was using Shirou's appearance for the first half of the coitus before he entered his real shadowy beast form as he did it and kept going.

I think the person most suited to be a rival to Caren would be either Ilya or Rin. Would be very ironic if it was Ilya since she is the daughter of Kiritsugu, Kirei's rival.

That is true! Its too bad we never get to see Caren in any anime adaptation of FSN except Carnival Phantasm. And she never really gets to interact with her father either, assuming she even knows who he is. Another interesting irony is that both Shirou and Rin were raised by men who caused the death of their real parents, namely Kirei and Kiritsugu. But while Shirou had a very close parent/child relationship with Kiritsugu, Rin had a rather distant and cold relationship with Kirei. She acknowledges him as her guardian and mentor but never grows to trust him, let alone call him 'father'. But then again, Kirei wasn't even a good father to his real daughter, Caren, having dumped her with her mother's relatives after she died.

there is an Emiya in town, but he is more of a Toy than a Rival to her. Rin has some potential and Sakura is very scary if you push her far enough
considering how much of a spoiler and how complex that guy's story is... then again Grail-kun is more or less him

Actually Avenger did appear in the last episode. When everyone's partying at the restaurant/bar they cut outside near the very end and you can see Avenger sitting there.
