Hair is always the biggest challenge for me when I draw portraits and sometimes it does drive me crazy but I get such a great sense of achievement when it is don.

I don't use anything for the white areas. I guess the trick is to make the dark areas really dark so that the white areas will stand out more. That is really the best I can answer your question. Hope it helps...
