canon means that it IS in the series. The creator have said "it is this way" or you have seen it happen in the series. For excample: Gamzee dring faygo, you have seen it actually happen in the series, therefor it is canon.
A headcanon though is something that has not happened in the series, but it has not been proved not to be.
For example: If you want Dave to have pink underpants, that can be your headcanon, because it has not been proved not to be.
