I think I need to make this one in particular more minecraft-y. I think it gets too foggy too fast so I was going to add some characteristic blue sky.. If you have any suggestions, that'd be swell

I wouldn't make the sky any clearer. The lighting is just so great as is. the only thing I would consider is varying the density of the fog lover down and showing a bit more mountain just barely coming through. if that makes any sense.
