Why not carve through, mount colored cellophane on the inside, then light the pumpkin with an LED tea light instead of a candle? You could hold the cellophane in with toothpicks, I suppose. Just a thought in case the paint doesn't work out!

I would try food dye first. It may work better if you do it on both sides.

Confused, would light be shining through it?/ Because you said you were etching it. So would it just be the design on a pumpkin or would there be a candle inside

It would be etched enough that light shines through. I just mean it won't be carved all the way through.

I wonder how you will make the transparent paint work. Obviously, this will be fantastic if it works out. I've never seen a pumpkin done with paint on the etched areas before.
