Hmm... Well, I'd imagine that as long as the other Horcruxes weren't destroyed (or he didn't know they were), Voldemort would just want to kill him anyway, since he was willing to lose the diary and "guy who can ultimately defeat you" seems like more of a risk than "lose one out of about a half-dozen immortality items." Otherwise he might want to capture Harry...but even then, I think he'd probably just want to kill Harry and make more Horcruxes. Which would probably be a bad idea, but he doesn't seem to realize how much he's degraded at this point.

He might torture him, and keep him somewhere until he can find a way to kill Harry w/o killing himself. I guess there's a possibility that he might take the chance and try to kill him anyways & make more horcrux?

As long as he's got other horcruxes around, yeah I could see him taking the chance.
On the other hand, I could also see him just locking Harry up somewhere, because the good guys wouldn't want to kill Harry because... well... he's Harry. And the Death Eaters would obey Voldemort. So he'd always have one horcrux floating around (until Harry died of old age or whatever) that nobody would destroy.

True. But what were the chances that Voldemort DID find out that Harry was a horcrux? With Harry's luck, close to 100%, but there was still a slim chance. I guess J K didn't add that happening was either because she didn't think about it (which is unlikely) or that it meant it would make the story too long, or maybe even she tried, and got a dead end plot.

I figure it made a better ending with Voldemort not knowing, you know? Plus, he was trying to kill Harry, he wasn't trying to make a horcrux in that instance so it sort of makes sense he wouldn't know until it was too late. But the what-ifs are fun. lol

He'd try to get Harry to join the Dark Side. That, or cast an Indestructible Bubble Charm around him. I don't think Harry would be too happy with that.
