I've made some shots of birds this winter and even put them here, but I'm not that skilled with birds in flight

It's all about practice. Gulls I found are the best to practice with, due to the way they mostly glide. Herons are quite easy to shoot in-flight. Pigeons next, for getting the hang of the speed.

From what you've mentioned I guess I'll have to try with pigeons first! 
It makes sense...I've tried at first with tits as they come most often for feeding but they can hang in the mid-air like colibers sometimes... No wonder they're always blurred
