Okay, I understand this might not seem minimalistic but hear me out.The fact that there are actually five different colors in this art takes away from the minimalism I'm going for.
But since Mega Latias and Mega Latios are both purple in color, I decided to differ them by giving Latios a more bluish purple and Latias a more reddish hue.
I also kept the color of their irises which was one of the few distinguishing features they had.

Admittedly, I don't know much about water colour. I never used it much on Photoshop. Maybe I'll try that out sometime.
As for background tips, here's my general rule of thumb:
*The subject must stand out from the background.
For landscape and scenery, the entire image is the subject, so not much.
For images with foreground subjects, you could try different colors, desaturation, a vignette, anything that separates the subject from the background.
Clarification here, you could actually make the subject blend with the background but it has a different way to make it work that I haven't quite understood yet. But I have a feeling has something more to do with composition.
