Doku all the way, greater experience in war, more ruthless and able to stab him and drain his energy plus go all spirit on him, throw his hand in and strangle him in a moments notice.

hmm both can cut each other and i don't see a particular disparity between their speed as far as i can tell Silver Samurai is peak human. Doku isn't that impressive either though.
Doku does however posses the Kitetsu, meaning a good stab can can almost fully heal him as well as his ghost form for if he is killed, that increases his range and allows him to go through solid objects.

Sword fighting skills that can match the tops in Marvel, a sword that can cut through anything that is not equally invulnerable to adamantium or energy absorbent as Vibranium, almost enhances level stats.
