She's an earthpony as, in theory, the people (or ponies, rather) were uncommon with magic. I'd just presume they'd all be earth ponies if they were ponies.
It also links in with Elsa being so close to an element of the earth.

I agree with you on Elsa being an earthpony. Otherwise, why would she try to hide her power; isn't it normal to have magic when you're a unicorn?
