I took this picture soon after I got my first DSLR and didn't have much ability with Photoshop etc.  I did alter the simple things like contrast etc on Photoshop Express which was very basic back then.  So the answer to your qusestion is that it will be pretty accurate colour, but the editing, such that it was will have brought out the best of the sky.  We get wonderful skies in the Highlands of Scotland because the weather is always changing.
