That because Saitama is suppose to represents the deconstruction of Super Heroes stories. The utterly plain looking guy defeats super powerful beings with one punch and that literally no one can defeat him or stand up to his infinite strength, weather they be god or monster he is capable of beating them regardless of their power. Sure Darkseid is an uber powerful being whose true form can destroy the universe but Saitama being the embodiment of absurd strength can beat him because he can and that's the joke. First off, haven't reached Garou. Second off, Boros directly stated that he never really had a chance against him, and that he could just regenerate over and over again.
Third, the characters entire appeal is the meta aspect of him. He is DEFINED by his meta-aspect. The entire point is that no matter where he goes he will never find a true threat. That's the POINT of his character.Β
Saitama would win, because that's the joke. It doesn't matter what you source, because the fact that, that's the joke is the only thing that matters. It's the only thing that will ever matter. Everything else is just trying to distract from that core point.
