I actually have a theory as to why. I believe it's because they are put into a realm of bliss. As seen from Erin when he transformed He was in a home with his parents and felt comfortable, even though his titan body was doing something entirely different. As one would have guess by now all Titans are probably humans like Erin. I just think that most of the ended up falling to the trap of the bliss whilst the body moves under pure instinct. They smile because the people who the bodies are formed from are happy.
