Design wise, he has his mothers eyes and passed them on to his daughter, and his coat is close to Big Macintosh's hooves as well as Applejack's mane. His mane ties are the color of Applejack's eyes, and his hooves are the color of the yoke that Big Macintosh wears.
Applejack's father, Yellow Bellflower was a towering stallion with an imposing physique, but a heart of gold and a shy demeanor. Though he was never to be trifled with when his foals were involved, he would much rather talk than fight, and was generally a peaceful stallion who tried to solve any of the farms problems by making deals and not intimidation. He was a baker at heart, earning his cutie mark in the kitchen with his mother, Granny Smith, he rarely talked growing up or as an adult, but he was always kind. His bright orange freckles were always something that his mother would tease him for, but he didn't mind. As his mom grew older, he took up applebucking to help her from having to hurt her back (don't tell him, but Granny is a spry old gal and could totally do it). When he wasn't applebucking, he was doing the other half of his farmwork, delivery, where he packaged all his baked goods and traveled across Equestria in a wagon to bring them to whoever ordered them. This gained him somewhat of a reputation as a kind stallion who could be depended on, though sometimes it was a bit tough for him to keep up with demand, he always made sure to make it on time and perfect. Even if it meant a little less sleep, he kept his appointments no matter what. Eventually, after the traveling had become old news to him, he made his way to Manehattan to deliver a package of apple tarts to a fancy family in the upper parts of the city. Even if the name was a bit odd; seemed funny that a family of Oranges would want a bunch of fancy tarts, but he didn't judge. And he got his answer when the young mare answered the door, her mane a perfect red, and a pretty little bow up in her hair, her birthday that day. She had apple cutie mark, just like him, and her name was Blenheim Orange, an apple name just like his. She was a little out of tune with her family, but he had the ears to listen. They talked for as long as they could before he had to depart, but they kept writing letters. He loved her from the moment he saw her, her soft face and lovely voice, but he never said it out loud, or wrote it, but he hoped she felt the same. Eventually, even apart, they became lovers through the mail, and Granny Smith encouraged her son to do what would make him most happy, farm be damned. Just as he packed his whole life into his wagon to travel to Manehattan, there was a fancy cab in Ponyville, the rider asking for directions to Sweet Apple Acres. And she was just as beautiful and witty as he had seen the first day they met. She hadn't felt at home more than when she was writing to him, having rough relationships with her own family, the choice was easy. And so, she joined the family, and they were wed. He found himself being pushed to be a little more bold by his now wife, but he agreed and enjoyed it, it was just what he needed to do. And when they had their first child, he found himself becoming a role model for the little colt Macintosh, strong and worldly. His son saw him as the strongest stallion in the world, and when he had his second foal, though they weren't as close, Applejack learned everything she knew about baking from him. And when their littlest and last foal was born, he made her the best applesauce he could. But one Zap Apple season, Blenheim never returned from collecting new seeds from the first tree, and he fell into a rut. Applejack left for Manehattan to look for something to fill the hole left by her mother, but he supported her either way. He tried to keep himself up, and did, but he still hurt. And since they still needed money, and Granny now was old enough that she couldn't buck, he had to take up delivering again. He did this well for a few months, but fell afoul of a long trip, confronted with a Chimera, he didn't have much of a chance. Applejack came back to learn that he had passed away, and was devastated, as was everypony in the Apple Family, remembering the sweet colt that had died.

Just a suggestion, but you might want to separate the story into different paragraphs. It's kind of hard on my eyes to follow ^^'''' But I love his design ^w^

Well, it's easy to see where Big Mac got his bulk from, and his reticence. Passed on his coat colour to one daughter, and practically passed his mane colour down to the other. Those freckles, though~...!
