Because, let's face it, what fanboys cannot love this pairing, when these two care deeply for one another?
If you ever watch or read "Higurashi", you can really see Rika & Satoko's special relationship: Rika is always trying to take care of the orphan, finds a way to cheer her up from being a Houjo, was desperate to save her from her evil uncle, and even went as far as getting the whole village to do it! After Teppei was finally arrested for child neglect & physical abuse, Rika then allowed Satoko to live with her.
And Satoko also cares much for Rika. I mean, did you see the way she got up and was all concerned for her while she & Hanyuu were talking, and before Takano's workers were coming after them?
They both even know how to cook!
Sure, she considered Shion her new "Nii-nii", but Rika, along with her other friends, will always be there for each other.

Yeah, even though I haven't seen much of this anime, although I want to, I have seen/ heard of Rika and Satoko's good relationship. I even drew a picture of the two together.
