It's been so long since I watched the series...was Goliath willing to become human for her, or was the only time that happened was the episode where Puck tricked him?

I believe it was Titania that brought Goliath into an AU where he was human and married to Elisa. That was in the third season, which is not considered canon. Goliath is turned human for one episode in I believe season 1 when Puck tricks Demona into wishing all the humans would disappear. other than that he stays a gargoyle.
