Hebrew is my mother tongue so I really wanted to know what was its part in the story, but if it's a secret I wouldn't want to spoil it.

Its not hebrew but "Kanji" the symbols were made by my friend lariz without any intention, yet the translation is different for either side. Blaze has his left side of protection and the right side of destruction, both with an incantation to release his "inner" selves

You'r sure the inscription isn't Hebrew? In few of his pictures the righting actually say a very specific Hebrew senates.

So how does his sword switch between red, blue and black?

This red blade is his original Bankai: Kewashii Jigoku, the scriptures that you see running down his blade activate the blue flame or black flame.
The right side of the blade, if said could end up altering Blaze into the black flame, vice versa for the left side and the blue flame!
Then Blaze's final form, but that's only ever occurred once.
