In accordance to MsWinters, it was basically certain color and power crystals, all lightsabers have two crystals, one determines the color, other is power/affect
Mace wind possesses a rare hurrikane crystal, which makes his a deeper purple then the one amethyst will achieve,Blue green & yellow actually determine a sub class in jedi, which specialise in certain fields.
Anyways, basically the red glow comes from rubys ^^

Sith can have any colour lightsaber, just in the movies they showed it as red, mostly because the synthised Saber Crystals gave off a red glow
Then the Jedi introduced the 3 main Jedi Colours, Blue, Green & Yellow, with Mace Windu being the main exeption.
