Hmm, well it's nothing too difficult. If there's one golden rule with sun shots, it's to use a polarising filter to cut down glare and reflections. Sure, you can shoot without a polariser, but it becomes very difficult not to overexpose at least portions of the image.
Aside from this, the main things to watch are aperture and camera shake. Most likely you want to get everything in focus, so that means using Av mode and a small aperture (= high f-number, like f16, or f22). You can let the cam autofocus on pretty much anything in this case, but to be sure I always focus on some foreground subject (like the tree here) and then compose the shot. Of course, with a small aperture, you're not letting much light in to the camera, and as the sun sets and the light fades. the camera will set longer shutter times to compensate. To avoid camera shake in this case, you'll need a tripod.
If you don't have a tripod, you'll need to ensure you can avoid camera shake and blurry images. In this case, use Tv mode. This will allow you to set a faster shutter (say a maximum of 1/4) which will make it possible to handhold the cam and still get a clear image. In shutter priority mode, the 300D will set the aperture automatically, so when things get darker, the aperture will be wide and it's unlikely that the whole scene will be focussed. Nonetheless, if you shoot throughout the sunset, you will certainly get at least a few great captures, handheld or not.

Thankyou! I really like this one too - something about the contrast between the twisted, deformed branches contrasted with the beauty beyond I guess.

Absolutely spectacular - I'm really impressed with the quality of the shot. You caught a really nice time, where the water is rippling and the sky is brilliantly colored. The dark shrubbery really offsets the bright colors reflected in the water and in the sky.
