Chances are Grookey, Scorbunny, and Sobble's National Dex numbers will be 810, 813, and 816 respectively given how Grookey is the first Galar Pokémon and Melmetal (809) is the last Alola Pokémon.

Arceus (493) is the last Sinnoh pokémon, but Snivy despite being first Unova pokémon isn't number 494.
Until Grookey is officially confirmed to be number 810, Scorbunny is officially confirmed to be number 813 and Sobble is officially confirmed to be number 816, it safer to not gave 'em national dex numbers yet.

...That's because Victini comes before Snivy in the Unova Dex (000) and National Dex (494). We know for a fact that Melmetal is the last Pokémon in the Alola Dex and will lead into Galar with the National Dex, so it makes sense that the Galar Starters would be 810, 813, and 816.

Grookey will be number 810 if there is no new Victini-like pokemon under dex number 000 in the Galar dex.
When Meltan was revealed, many people thought it will be 000 in Kanto dex in Let's GO games.
We don't know for sure if Sword and Shield has some pokémon that comes before Grookey in regional dex.

There's not going to be another Victini-like Pokémon in the sense that there would be a 000. They only did it once for a reason because they realized how stupid that was. Grookey will straight up be the first Pokémon in the Galar Dex, meaning he will be 810 in the National Dex.
