Is it really wise to have 'friendly' bout with razor sharp knives whilst wearing environment suit?

It is dangerous, yes, but they are trained soldiers, so they know how to handle combat knives. Both of their envirosuits have armor plating in certain areas so that offers a little more protection. Plus if you think about it, it's not like it would be any safer in an actual combat scenario.
Through all the Mass Effect games, Tali is seen with a knife, and even uses it in the third game. I'd suspect it as a weapon of last resort for quarians but still, it's a weapon, and you only get better with it by training with it. And if a mistake is made, the damaged part of their suit can seal off to prevent the spread of an infection. Along with suit injecting antibiotics, and the other providing medical assistance, etc.
