This actually makes more sense really. A flying, red, scaly cyclopic head with fangs really just looks like bad tattoo art or heavy metal music videos, but this thing I could imagine actually existing.

I really like this design. While there are several backstories for how the beholder exists, I feel this one is more believable as a creature in a world, still just as strange, but far more organic design then the standard rather functional focused design of the monster manual arts. Β The color pallets and design feel more crustasion-like which is somewhat typical for aberrations, and the octopod like nature of many tentacled creatures shows up here, it doesn't feel like it is treading any old ground at all, and does something really neat while feeling very familiar.

its extremely well made, and I personaly like it, the center eye, in my opinion could be a bit bigger, but still, it would be great to had that as an official beholder in the monster manuals of D&D
