IMHO, I would say that when you go to shoot, have a heavy bag hanging from your tripod (if you are using one) to weigh it down and reduce the vibrations from the wind and your hands. Maybe even think about a cable release so your hand movement won't take away from the sharpness. I would increase the aperture to around f/8 to maintain some detail in the bill and behind the head. I would do like you have done and ensure that you focus on the eye and if at all possible, try and capture a catch light to add some depth to the goose's eye. That is what I would do personally. A lot to think about in the moment but if you keep it up you're bound to get some pure gold.
